ORIENTAL PORK CASSEROLE 
1 lb. cubed pork
3 tbsp. flour
2 tbsp. butter or olive oil
1 1/2 c. sliced celery
2 sm. onions, chopped
1 (10 1/2 oz.) can cream of chicken soup
1 (10 1/2 oz.) can cream of mushroom soup
1 soup can of water
2-3 tbsp. soy sauce
1/2 c. UNcooked rice

Heat oven to 325 degrees (slow medium). Roll meat in flour; brown in hot fat over medium heat; stir in rest of ingredients. Pour into 2 quart baking dish. Bake covered 1 1/2 hours. Makes 6 servings.

NOTE: Even better when made ahead and reheated.

I grew up eating this casserole. It was my grandmothers favorite! I made it last night but cut 1/2 cup of celery and one of the onions and added a red bell pepper and a container of fresh mushrooms. It was awesome!
