MOM'S ENCHILADAS 
1 pkg. sm. flour tortillas
1 pkg. lg. flour tortillas
1 can green chilies
1 can Ro-Tel
1 can enchilada sauce
1 sm. onion, chopped, optional
1 can refried beans
3 lbs. ground chuck
1 lb. grated Cheddar cheese

Heat oven to 350 degrees. Brown ground chuck. Drain. Place in large mixing bowl and add green chilies, onion, 1/2 of Ro-Tel, refried beans. Mix well. Put 2 tablespoons into each large tortilla and 1 tablespoon into each small tortilla. Top with remaining sauces and cheese. Place in oven until cheese melts, about 15-20 minutes.
