APPLE - CINNAMON MUFFINS 
1 3/4 c. flour
2 tbsp. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1 egg, well beaten
3/4 c. milk
1/3 c. liquid shortening
1 c. peeled, chopped apple

1. Preheat oven to 400 degrees.

2. Grease muffin pan.

3. Combine flour, sugar, baking powder and salt in a large bowl. Stir well.

4. Combine egg and milk in a small bowl, then pour into the dry ingredients.

5. Add shortening. Fold in apples. Stir 10 to 20 seconds, only until dry ingredients are moist. You batter will have lumps but that's okay.

6. Spoon into greased muffin pan, filling each pan about 2/3 full.

7. After batter is in the muffin pan, sprinkle with a mixture of 2 tablespoons sugar and 1/8 teaspoon cinnamon.

8. Bake for 25 minutes or until muffins are golden brown. Remove from the pan. If you're eating them right away cover them to keep them warm. If you are storing them, let them cool completely and then wrap them. Makes 12.
