BAKED VEGETABLE OMELET 
1 c. shredded pepper Jack cheese
1 1/2 c. chopped broccoli or 1 (10 oz.) pkg. frozen chopped broccoli, thawed & drained
2 med. tomatoes, coarsely chopped
2 c. shredded cheddar cheese (8 oz.)
1 c. milk
1/4 c. flour
1/2 tsp. salt
3 eggs

Layer pepper cheese, broccoli, tomatoes and cheddar cheese in ungreased square baking dish, 8"x8"x2". Beat milk, flour, salt and eggs until smooth; pour over cheese. Bake, uncovered in 350 degree oven until egg mixture is set, 40 to 45 minutes. Let stand 10 minutes before cutting.
