BAKED EGG OMELET 
6 dozen eggs
2 qt. hot milk
1 c. melted butter

Mix eggs and slowly add hot milk. Pour into 2 large inserts that have 1/2 cup melted butter in. Bake at 325 degrees for 10 minutes. Stir and bake 10 minutes more. 50 servings.

VARIATIONS:

1. 1 pound cubed cheese.

2. 3/4 pound cubed ham and 3/4 pound cubed cheese.

3. Same as #2, plus 1 cup chopped onion, 1 cup chopped green pepper, and 4 cups chopped tomatoes.
