ZUCCHINI-TOMATO QUICHE 
2 c. chopped zucchini
1 c. chopped tomato
1/2 c. chopped onion
1/3 c. Parmesan cheese
1 1/2 c. milk
3/4 c. Bisquick baking mix
3 eggs
1/2 tsp. salt
1/4 tsp. pepper

Grease a 10 inch pie plate. Sprinkle chopped vegetables in plate. Mix remaining ingredients 15 seconds in blender until smooth. Pour into plate. Bake until knife inserted in center comes out clean. Delicious.
