ZUCCHINI MUSHROOM QUICHE 
3 c. shredded zucchini
1 c. chopped mushrooms
4 eggs, beaten lightly
1 c. Jiffy or Bisquick mix
1/2 c. Parmesan cheese, grated
6 oz. shredded Swiss cheese
2 tbsp. olive or canola oil
4 green onions, chopped
1 1/2 tsp. dry dill weed
tomato, chopped (optional)

Combine all ingredients in large bowl. Pour into "Pammed" quiche or pie dish. Top if desired with chopped tomatoes.

Bake, uncovered, at 350°F for 40 minutes or until knife inserted comes out clean.
