OVEN FRIED POTATOES 
4 med. sized baking potatoes, scrubbed
1/4 c. butter
1/8 tsp. pepper
1/4 c. Parmesan cheese (optional)

Cut potatoes into wedges. Melt butter in shallow pan. Brush entire wedge with butter. Sprinkle with pepper and Parmesan cheese. Place wedge skin-side down in pan. Bake at 425 degrees for 40 minutes or until done.

VARIATION: Brush wedges with following mixture:

1/4 tsp. garlic powder
1/4 c. oil
1 tbsp. Parmesan cheese
1/4 tsp. paprika
