GREEK OVEN FRIES 
2 med. baking potatoes, unpeeled (1 lb.)
2 tsp. olive oil
Vegetable cooking spray
1 tsp. dried whole oregano
1/4 tsp. pepper
1/8 tsp. salt
2 tbsp. malt vinegar

Scrub potatoes; cut each lengthwise into 8 wedges. Place wedges in a bowl; cover with cold water. Let stand 30 minutes; drain. Pat dry with paper towels.

Toss potatoes with oil; place skin side down on a baking sheet coated with cooking spray. Combine oregano, pepper, and salt; sprinkle evenly over potatoes. Bake at 400 degrees for 50 minutes, or until potatoes are tender and browned.

Remove from oven and sprinkle with vinegar. Serve oven fries immediately. Yields 4 servings.

Or use 1/2 teaspoon dried whole rosemary in place of oregano and omit the vinegar.
