MEAT, POTATO AND CHEESE SCALLOP | |
2 tbsp. butter 2 tbsp. flour 1/4 tsp. salt 1 c. milk 2 1/2 c. luncheon meat, cut in cubes (Spam, Surplus food canned meat, etc.) 3/4 c. cubed cheese 1 med. onion, sliced thin 4 med. potatoes, sliced thin Melt butter in pan. Stir in flour, salt. Add milk slowly, stirring until smooth. Cook and stir about 3 minutes or until thickened. Add cheese, stir over low heat until melted. Slice potatoes and onions thinly. Put meat, potatoes and onions in greased baking dish. Pour sauce over top - cover. Bake at 350 degrees for 1 hour. Uncover for 15 minutes. (Bake until brown on top and potatoes are cooked). Serves 2-3 with salad or vegetable. |
