PORTUGUESE TARTLETS 
NOTE: For this recipe you will need 3 tartlet pans - 36 tartlets.

CRUST:

Stir together: 1/3 c. sugar 1 tsp. finely grated lime peel

Cut in 1/2 cup butter to make fine crumbs. Stir in 1 slightly beaten egg. Blend with fingers to form a ball. Pinch off 36 balls of dough into pans and press evenly into bottom and sides.

FILLING:

Beat 2 eggs and stir in: 1/4 c. flour 1/4 c. cream of coconut 2 tbsp. lime juice 2 tbsp. water 2 tbsp. melted butter 2 c. grated coconut

(Use your blender.) Spoon the mixture into the tartlet crusts. Bake at 325 degrees for 25 minutes.
