CHILIES RELLENOS BAKE 
1 lb. ground beef
1/2 c. chopped onion
2 (4 oz.) cans green chilies, drained
6 oz. sharp Cheddar cheese, shredded (1 1/2 c.)
1 1/2 c. milk
4 beaten eggs
1/4 c. flour
1/2 tsp. salt
Several dashes bottled hot pepper sauce
Dash of pepper

Brown beef and onions; drain off fat. Add salt and pepper. Halve chilies crosswise, remove seeds. Place half the chilies in 10x6x1 1/2 inch baking dish; sprinkle with cheese, top with meat mixture. Arrange remaining chilies over meat. Combine remaining ingredients, beat until smooth. Pour over chilies. Bake at 350 degrees for 45 to 50 minutes (when knife inserted comes out clean). Cool 5 minutes before serving. Makes 6 servings.
