CHILI RELLENO BAKE 
1 lb. ground beef
1/2 c. chopped onions
1/2 tsp. salt
1/4 tsp. pepper
roasted banana pepper or 2 (4 oz.) cans chopped green chili
1 1/2 c. sharp Cheddar cheese, grated
1 1/2 c. milk
1/4 c. flour
1/4 tsp. cumin
1/2 tsp. salt
dash of pepper
4 eggs, beaten
hot pepper sauce

Preheat oven to 350°F. Brown beef and onions; drain off grease. Season with salt and pepper. Place 1/2 green chili (peppers) in 10 x 6 x 2-inch baking dish and sprinkle with 1/2 grated cheese. Top with the meat mixture and then with remaining peppers (or chilies) and cheese. Combine remaining ingredients in a bowl and beat until smooth. Pour this mixture over pepper-meat mixture.

Bake 50 to 60 minutes until lightly browned and knife comes out clean. Cool 5 minutes and serve with a red or green taco sauce.
