CHICKEN ROLL-UPS | |
4 chicken breasts, boneless & skinless Seasoning mix, like Tony Cachere's (or your favorite combination) Assorted vegetables: julienned or whole baby carrots, whole green beans or asparagus spears Chicken stock or white wine Pound chicken breasts lightly to flatten. Sprinkle undersides with seasoning mix. Place vegetable strips across each breast and roll up. Tuck ends underneath, sprinkle tops with a little more seasoning mix. Pour enough chicken stock or white wine in baking dish to surround rolls. Bake at 350 degrees for 30 to 40 minutes, basting occasionally. Cool roll-ups, slice each into about 4 slices and arrange on platter. Serve warm or at room temperature. Serves 4. |
