MAKE AHEAD BRAN MUFFINS | |
Prepare batter and have in refrigerator for muffins "as quick as a wink". Will keep in refrigerator for up to 4 weeks. 2 c. boiling water 6 c. 100% Bran or Bran Flakes 1 c. shortening 2 c. sugar (1/2 brown) 1 c. honey 4 eggs 1 qt. buttermilk 3 c. whole wheat flour 2 c. all purpose white flour 5 tsp. baking soda 1 1/2 tsp. salt Pour boiling water over 2 cups Bran, cool slightly. In extra large mixing bowl, blend together shortening, sugar and honey. Add eggs, buttermilk, flour, salt and soda; mix well. Stir in soaked bran and remaining 4 cups bran. Store in covered container in refrigerator and bake as needed. Date container. Bake in 400 degree oven for 20 to 25 minutes. Use well greased muffin pan. Makes 5 to 6 dozen. Huckleberries, chopped dates or chopped apples may be added. |
