TOP OF STOVE SUPPER 
1 tbsp. butter
2 potatoes, thinly sliced
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. diced onion
1 tbsp. green pepper, diced
1 c. diced cooked ham
2 eggs, slightly beaten
1/4 c. shredded Cheddar cheese

Melt butter in large heavy skillet. Layer next 6 ingredients in skillet. Cover and cook over low heat 30 minutes. Pour eggs over mix. Cook 15 minutes more. Top with cheese. Cover and cook 5 minutes or until cheese melts.
