BUTTER HERB BAKED FISH 
1/2 c. butter
1/4 c. Parmesan cheese
1/2 tsp. basil leaves
1/2 tsp. salt
1 lb. sole, perch or haddock, thawed & drained if frozen
2/3 c. crushed saltine crackers
1/2 tsp. oregano
1/4 tsp. garlic powder

Preheat oven to 350 degrees. In a 13"x9" baking dish, melt butter in preheated oven about 5 to 7 minutes. Meanwhile, in 9" pie pan combine cracker crumbs, Parmesan cheese, basil, oregano, salt and garlic. Dip fish pieces in butter and then into crumb mixture. Arrange fish fillets in baking dish. Bake near center of oven 25 to 30 minutes.
