NINE EGG PLAIN SPONGE CAKE 
9 eggs
3 c. sugar
1 1/2 c. hot water
3 c. all-purpose flour
3 tbsp. vanilla extract
3 tbsp. lemon juice

Beat the eggs with half the sugar until they thicken. Add the water and the remainder of the sugar and beat again. Put in the flavoring, then the flour, folding these in as gently as possible. Bake in a shallow pan that has been greased and floured for about 60 minutes at 325 degrees.
