BLUEBERRY OAT MUFFINS 
1 1/4 c. flour
1 c. uncooked quick oats
1/2 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
3/4 c. nonfat sour cream
1/3 c. butter, melted
1/3 c. skim milk
1 egg, beaten
1/2 tsp. vanilla
1 c. blueberries
Sugar and cinnamon

Combine flour, oats, sugar, baking powder and soda. Set aside. Combine sour cream, butter, milk, egg and vanilla. Add dry ingredients. Mix but don't over mix. Add blueberries and mix again. Line muffin pans with paper cups and fill them about 2/3 full. Sprinkle with sugar and cinnamon. Bake at 400 degrees for about 20 minutes. Makes 1 dozen large muffins.
