MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. white corn syrup
1 c. salted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Mix sugar and corn syrup in 1 1/2 quart microwaveable dish; cook on high for 4 minutes. Stir in salted peanuts. Cook for 3 minutes on high (will be light golden brown). Add butter and vanilla; mix well.

Cook 1 1/2 minutes on high. Add baking soda. Mix well. Pour on greased cookie sheet. Let cool 1/2 hour and break into pieces. (Can use coconut, almonds or pecans.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
