SPECIAL PEANUT BRITTLE
(Microwave)
 
1 1/2 c. raw shelled "Southampton" peanuts, skins on
1 c. granulated sugar
1/2 c. light corn syrup
1/8 tsp. salt
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Stir peanuts, sugar, syrup and salt together in a 1 1/2 quart glass casserole. Cook in microwave for 4 minutes on high. Stop. Stir well. Return to oven and microwave on high for 4 minutes more. Stop. Stir in butter. Microwave 2 minutes more. Stir in vanilla. Add baking soda; quickly stir until light and foamy. Immediately pour onto a lightly greased platter or other heatproof surface; spread to about 1/4 inch thickness. Cool. When cool, break into pieces. Store in an airtight container.

Makes 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
