ONION SHORTCAKE 
2 lg. onions, thinly sliced
1 stick butter, melted
1 (8 oz.) container sour cream
1/2 tsp. dry dill
2 c. Cheddar cheese, grated
1 egg, slightly beaten
1 (15 oz.) can cream corn
1/3 c. milk
8 1/2 oz. Jiffy corn muffin mix

Saute onions in butter until tender. Remove from heat and add sour cream, dill, and 1 cup cheese and mix. Mix muffin mix, milk, egg, and corn together. Pour corn mixture into buttered 9 x 13 inch pan. Spread onion mixture over that. Sprinkle remaining cheese over that. Bake at 400 degrees for 30 to 40 minutes.
