LOW CAL MEATLOAF 
1/2 c. each minced celery and water
1/2 green pepper, seeded and minced
1/4 c. minced onion
1 pkg. Weight Watchers instant chicken broth and seasoning mix
1 1/2 lb. ground beef or veal
1/4 c. plus 2 tbsp. dried bread crumbs
2 tbsp. catsup
1 tsp. Worcestershire sauce
1/2 tsp. each thyme leaves and salt
1/8 tsp. each garlic powder and pepper

Combine celery, water, green pepper, onion and broth mix. Cook until celery is tender. Transfer to bowl. Add remaining ingredients; mix wel. Divide into 2 loaves; place on rack in baking pan. Bake at 375 degrees about 45 minutes or until firm.
