LOW CAL IMPOSSIBLE PUMPKIN PIE 
1/4 c. butter (soften)
1 tsp. baking powder
1/4 tsp. salt
2 tsp. pumpkin pie spice
2 eggs
2 tsp. vanilla
1 c. light evaporated skimmed milk (Pet light)

Mix together then add 3/4 cup flour mix, then add 2 cups of canned pumpkin then beat. Pour into pie pan. Bake at 350 degrees for 50 to 55 minutes. It will make its own neat crust.

For health consciousness I left out salt, used 3 egg whites. I wasn't sure what the "flour mix" referred to so I used whole wheat flour. I added cinnamon and a small amount of orange liquor (I don't think that added a thing). It looks lovely and tastes good.
