LASAGNA
3/4 c. olive oil
1 1/2 lbs. ground beef
1 lg. onion, chopped finely
3 green onions, chopped finely
Pinch of oregano
Salt and red pepper
1 can tomato paste
1 c. water

In saucepan, saute onions, green onions, and garlic in olive oil. Add ground beef and cook until done. Add oregano, salt, pepper, and tomato paste. Stir well. Add water and cook over low heat about 1 hour, stirring occasionally.

LASAGNA:

3 oz. lasagna noodles (1/2 pkg.)
1 pkg. Mozzarella cheese
1 tbsp. olive oil
1 pt. Ricotta cheese
1 tbsp. salt
Sprinkling of grated Romano cheese
3 qts. boiling water

In large pan, heat water to boiling. Add salt and olive oil to boiling water. Add lasagna noodles and cook, uncovered, until tender (about 10 to 15 minutes); drain well. Cover the bottom of a rectangular pan with 1/3 meat sauce, then 1/3 Mozzarella cheese, then 1/3 Ricotta cheese; layer over this 1/2 the noodles. Cover this with 1/3 meat sauce, Mozzarella, and Ricotta cheeses, then remaining lasagna noodles like the first layer. Use the remaining ingredients. Sprinkle the grated Romano cheese over the top. Bake at 375 degrees for 30 to 45 minutes. Makes 6 to 8 servings.
