CARROTS AND POTATO CASSEROLE 
4 carrots
4 onions
8 potatoes
1/2 c. butter
Salt
Pepper
1/2 c. sour cream
Grated cheese

Boil carrots, onions and potatoes until tender. Drain and mash together. Add 1 stick (1/2 cup) butter, salt, pepper and 1/2 cup sour cream. Pour into casserole dish and sprinkle with cheese. Bake at 350 degrees until cheese melts.
