STIR FRIED RICE 
1/2 c. shrimp, cooked or fresh
Roast pork or ham (diced)
2 eggs
2 tbsp. green peas
Raisins (optional)
2 tbsp. chopped green onions
6 c. cooked rice
2 tsp. salt
8 tbsp. oil
Soy sauce to flavor

Heat 2 tbsp. oil in pan. Pour in the beaten egg and stir fry quickly until eggs are in tiny pieces. Remove from pan.

Heat another 3 tbsp. oil. Stir fry shrimp and ham. Add green peas. Heat another 3 tbsp. oil in same frying pan. Fry the onion and cooked rice. Mix well. Add salt by sprinkle.

Reduce heat and stir until rice is thoroughly heated, then add all of the above ingredients which have been previously prepared. Combine well and serve on pretty platter.
