SHREDDED POTATOES AU GRATIN | |
6 lg. potatoes 2 c. shredded Cheddar cheese 6 tbsp. butter, divided 2 c. sour cream 1/3 c. chopped onion 1 tsp. salt 1/4 tsp. pepper Boil potatoes in skins. Chill, peel and shred. Stir in cheese and 4 tablespoons melted butter. Fold in sour cream, onion, salt and pepper. Place in a greased casserole or if you prefer divide into individual casseroles. Dot with remaining butter. Bake at 350 degrees for 30 minutes. Serves 6-8. |
