QUICK HAMBURGER & POTATO
CASSEROLE
 
2 2/3 c. instant mashed potato flakes
1 1/2 c. sour cream
1/2 c. water
1 lb. ground beef
3 tbsp. chopped onion
1 (15 oz.) can tomato sauce
1 (12 oz.) can corn
1/2 c. water
1 tsp.salt
1/4 tsp. pepper
1/8 tsp. oregano
1/2 c. diced Cheddar cheese

In ungreased 9x13 inch baking dish, blend potato flakes with sour cream and 1/2 cup water. Mixture should be crumbly. If not, add more potato flakes. Pat firmly into bottom of pan.

Brown beef with onions and add 1/2 cup water and remaining ingredients except cheese. Spoon beef mixture over potatoes. Sprinkle with cheese.

Bake at 350 degrees for 25-30 minutes. This recipe is easily doubled.
