TABOULI 
1 c. cracked wheat
1 bunch scallions, chopped
2 bunches parsley, chopped
4 tbsp. tomatoes, chopped
4 lemons, juiced
1/2 c. olive oil
Salt and pepper to taste
1 oz. brandy
1 oz. cointreau
1/4 c. oil
1/4 c. vinegar
1/2 tbsp. shallots, chopped
4 strips bacon, cooked
Salt and pepper to taste

Soak wheat in water for a few minutes. Squeeze dry by pressing between palms. Add remaining ingredients. Mix well. Serve with fresh lettuce leaves and pita bread.
