TABOULI 
1 c. bulgur
1/2 c. warm water
1 med. tomato, peeled & chopped
1/2 c. finely chopped parsley
2 tbsp. finely chopped green onion
2 tbsp. cooking oil
1 tbsp. finely chopped fresh mint or 1 tbsp. dried mint, crushed
1/2 tsp. salt
1/4 c. lemon juice
1 tbsp. olive oil
Lettuce
Plain yogurt

In a bowl combine bulgur and warm water. Let stand 1 hour. Stir in tomatoes, parsley, green onion, mint, salt and dash pepper. Combine lemon juice and cooking oil and olive oil. Toss with bulgur mixture. Cover and chill. Serve in lettuce-lined bowl with yogurt. Makes 6 servings.
