CHICKEN CROQUETTES 
3 tbsp. Crisco (melt first then add)
1/3 c. flour
1 tsp. salt
1 c. milk

Cook until thick.

2 c. chopped cooked chicken
1 tbsp. or more of onion
2 tbsp. minced parsley

Mix these into the thickened flour mixture.

2 eggs
2 tbsp. lemon juice
1/3 c. fine bread crumbs

Beat eggs and lemon juice. Form the chicken mixture into croquettes and then dip into egg mixture, then into bread crumbs. Fry in Crisco until golden brown.
