DELICIOUS LEMON CAKE
1 pkg. yellow deluxe cake mix (Duncan Hines)
1 pkg. lemon instant pudding mix (Jello) - must be instant
5 lg. eggs
3/4 c. Crisco oil
3/4 c. milk
2 tsp. vanilla
Sauce to pour over cake (see directions)

Use 10 inch tube pan. Oven at 350 degrees.

Grease and flour cake pan. Preheat oven. Mix together in large bowl the cake mix, pudding mix, eggs, oil, milk and vanilla. Beat on speed indicated on your mixer for cake mixes (usually medium) for 10-12 minutes, scraping bowl sides frequently with rubber scraper. Turn batter into prepared pan. Bake about 45 minutes or until wooden pick stuck halfway between pan and tube comes out clean. Set cake out of oven - leave oven heat on.

While cake is baking, combine sauce: Mix together five tablespoons (scant 1/3 cup) fresh orange juice, 3 tablespoons fresh lemon juice and 2 cups confectioners' sugar. Mix lightly, leave lumpy. Holding 2 toothpicks firmly together, punch holes all over cake and pour sauce into them. Return cake to oven; heat 5 minutes. Remove from oven and let cool 30 minutes before removing to serving plate.

Delicious Lemon Cake

OH MY!! This is the same cake my mom made with the exception of the orange juice! Instead of the orange juice, to get that real lemony flavor, she would use 1/2 cup Real Lemon Juice and 2 tbsp Lemon Extract (amount to taste... depends on how "tangy" you like it), and 2-3 cups of confectioners' sugar. She would also add a bit of Lemon Extract to the cake batter. IT WAS SO AWESOME! Now that she has passed on I keep her Lemon Cake going in the family!

This is by far the best lemon cake ever! I made it in a tube pan and it turned out so good!! My husband was skeptical and yes...he LOVED it!!! Didn't change the recipe and will keep this in my collection of favorites!
