SWEET POTATO PUDDING | |
4 c. grated raw sweet potatoes 1/2 tsp. ground ginger 1/2 tsp. cloves 2 c. firmly packed brown sugar 1 c. melted butter 2 tsp. grated lemon peel 1 tsp. cinnamon 1 tsp. salt 4 eggs, well beaten 1 c. chopped nuts for topping (pecans or walnuts) Preheat oven to 350 degrees. Combine all ingredients, except eggs and pecans, until well mixed. Add eggs and stir until well combined; pour into 3-quart casserole. Top with nuts. Bake 1 hour. Makes 10 servings. About 480 calories each. This is a great pudding around the holidays. |
