MOCK PECAN PIE 
1/4 c. butter
1 c. dark corn syrup
3 eggs, well beaten
1/2 c. quick oatmeal
9 inch pastry shell, unbaked
1/2 c. sugar
1/4 tsp. salt
1/2 c. coconut

Cream butter. Add sugar gradually and cream until light and fluffy. Add syrup and salt; beat well. Add eggs, one at a time, beating after each addition. Stir in coconut and oatmeal. Pour into unbaked pie shell. Bake at 350 degrees for about 50 minutes or until knife inserted comes out clean. Cool before serving.
