POTATO SKINS (CRISPY) 
4 baking potatoes
1/4 c. butter, melted
Salt and pepper
Parmesan cheese
Garlic powder
Chived sour cream
8 strips of bacon, fried crisp

Wash potatoes; dry, prick with fork; bake in 425 degrees for 1 hour. Cool potatoes slightly; cut into quarters (wedge-shape). Scrape out most of pulp; place skin-side down on baking sheet; brush with melted butter; salt and pepper to taste; sprinkle with Parmesan cheese and garlic powder; return to oven and bake until crispy (10 minutes). Serve with chived sour cream and bacon bits.
