LYONNAISE POTATOES 
6 med. potatoes
1 lg. onion, diced
5 tbsp. butter
1/2 tsp. paprika
Salt & pepper
1 tbsp. minced parsley

Fry onions to medium brown in butter in heavy skillet. Peel and dice potatoes into small cubes. Add to onions, sprinkle with salt, pepper and paprika; stir well. Cover tightly and cook over low heat for 30 minutes or until potatoes are tender. Sprinkle with parsley and serve. 6 servings.
