PICKLED BEETS | |
4 c. water 2 c. apple cider vinegar (5% acidity) 1 c. sugar Bring to a rolling boil. Pour over hot prepared beets. Seal immediately. "Brine" makes enough for about 8 pints (it can be saved for future use). To prepare beets - wash thoroughly. Do not cut root off. Leave 1 inch stem. Do not cut beet for it will bleed. Cook washed beets until soft, skins will slip off. Pack in clean hot jars. Pour brine over SEAL. For best seal use lids and rings. Complete one jar at a time. |
