LEFTOVER TURKEY TACOS
1 lb. leftover turkey meat (white and Dark), finely chopped
1 large clove of garlic, minced
juice of 1 lime
1 tbsp. olive oil
1 env. favorite taco seasoning mix
1 cup lettuce, chopped
1/2 cup onion, chopped
1/2 cup tomatoes, chopped
1 cup shredded cheese (Colby-Jack is good)
soft or hard taco shells

Finely chop turkey (use white and dark, if you use just white meat, add a little extra olive oil to help moisten). Add oil to pan and heat over medium to medium-high heat. Add garlic and cook for about 45 seconds or until fragrant.

Add chopped turkey and mix well, heating thoroughly (but not browning the meat). Add lime juice and cook until well heated (meat should be moist but have no extra liquid).

Follow the directions for your favorite taco seasoning from here on out. Chop your veggies just as you would for tacos, add your favorite hot sauce and some dairy sour cream and you have a yummy leftover dish the whole family will love! Enjoy.
