LEFTOVER TURKEY SALAD 
Have a lot of turkey leftover from the holidays? Well I have a recipe for you!

leftover turkey
2 celery stalks, chopped
1/2 onion, chopped
1/4 cup leftover cranberry sauce
1/4 cup pecans (chopped)
1/4 cup green grapes (sliced in half)
olive oil based mayonnaise (I use a generous amount!)
salt and pepper, to taste

Get a medium to large size bowl. Place turkey (chopped up), celery, onions, cranberry sauce, pecans, and grapes and mix in bowl. Add mayonnaise (as much as you'd like) and season with salt and pepper, to taste.

Toast bread and add a generous serving with Provolone cheese and eat as a sandwich! Or top onto salads instead of dressing, bake into a casserole, or eat alone!

Make your own Cranberry Sauce if none is available.

HOMEMADE CRANBERRY SAUCE:

1 bag fresh cranberries
3 cups water
1 cup sugar

In a medium to large size saucepan, put cranberries and water and heat to a boil. Lower heat and simmer till cranberries become soft, but do not heat to create a sauce. The "sauce" should be chunky. Add sugar, and cool. Ready to eat!
