ZUCCHINI BOATS 
4 med. squash
1/2 c. water
1/2 lb. pork sausage
1/4 c. chopped onions
1 slightly beaten egg
1/2 c. crushed crackers
1/8 tsp. garlic salt
Paprika
1 c. squash pulp
1/2 c. (2 oz.) shredded Mozzarella cheese
1/3 c. Parmesan
1/4 tsp. salt
1/4 tsp. thyme
1/8 tsp. pepper

Halve squash lengthwise. Scoop out pulp, leaving 1/4 in shell. Chop enough pulp for 1 cup. Place squash cut side down in skillet, add water. Simmer 3 minutes, drain. Remove and sprinkle with salt.

Cook sausage and onion until brown, drain off fat. Stir in squash pulp, egg, crackers, cheese and spices. Spoon into squash shells. Place in shallow baking dish, sprinkle with paprika. Bake uncovered 25 minutes at 350 degrees.
