ZUCCHINI PARMESAN 
2 med. zucchini
2 tbsp. flavored bread crumbs
2 tbsp. Parmesan cheese

Wash zucchini and split lengthwise. Cook, covered, in boiling water until tender 5-7 minutes; drain well. Combine crumbs and Parmesan cheese on waxed paper. Dip tops of zucchini into mixture; set crumb side up in baking pan. Sprinkle remaining crumb topping over zucchini. Place zucchini 6 inches below broiler flame; broil until golden, 3 minutes.
