ITALIAN STUFFED ZUCCHINI 
6 lg. zucchini
1 lb. Jimmy Dean sausage
1 sm. onion, finely chopped
1/2 c. dry bread crumbs
1/4 c. ketchup
1 egg, slightly beaten
1/4 tsp. salt
1/4 tsp. thyme
1/3 c. Parmesan cheese

Cook whole, unpeeled zucchini in boiling water for 10 minutes or until barely tender. Drain and cut lengthwise in half. Scoop out center, leaving walls 1/4 inch thick. Chop centers and reserve. Brown sausage in skillet with onion. Pour off fat. Stir in chopped zucchini, bread crumbs, ketchup, egg, salt and thyme.

Place zucchini shells in large shallow baking dish. Fill with sausage mixture. Sprinkle with Parmesan cheese and bake at 350 degrees for 30 minutes.
