QUICHE LORRAINE 
Frozen pastry shell

BASE:

12 slices bacon, crisply fried and crumbled
1 c. shredded natural Swiss cheese
1/3 c. minced onion

EGG MIXTURE:

4 eggs
2 c. half & half
3/4 tsp. salt
1/4 tsp. sugar
1/8 tsp. cayenne red pepper

Sprinkle bacon, cheese and onion into pastry shell. Beat eggs slightly. Place pastry-lined pie plate on oven rack. Stir egg mixture and pour into pie plate. (This keeps from spilling as it fills the shell totally.) Bake in 425 degree oven for 15 minutes. Reduce oven temperature to 300 degrees and bake about 30 minutes more, until knife inserted comes out clean.
