TOFU BURGERS 
1 lb. firm tofu
2 eggs
1/2 c. bread crumbs
3 oz. Cheddar cheese, grated
1/4 tsp. pepper
1 tsp. basil
1/2 tsp. garlic powder

Mash tofu, add eggs, bread crumbs, cheese, and spices. Mix until thoroughly combined. Form into patties, fry in saucepan with 1 tablespoon oil. Serves 4. Serve with ketchup; can be eaten on a bun.

VARIATION:

1/4 c. Parmesan cheese
1/2 tsp. oregano

Form into balls; fry in small amount of oil until brown. Place tofu balls in casserole; cover with tomato sauce. Bake 20 minutes at 350 degrees. Serve with spaghetti.
