TOFU - CHEESE MANICOTTI 
9 oz. firm tofu
3 oz. Mozzarella cheese, shredded
2 oz. Cheddar cheese, shredded
2 oz. grated Parmesan cheese
2 eggs, lightly beaten
2 tsp. fresh parsley, chopped
1/2 tsp. basil
1/4 tsp. salt
2 c. spaghetti sauce
8 uncooked Manicotti shells, cooked according to pkg. directions & drained
1/8 tsp. nutmeg
1/4 tsp. pepper

Preheat oven to 350 degrees. In blender or food processor, blend tofu until crumbly (do not puree). Transfer to medium bowl; add remaining ingredients except shells and sauce and stir to combine. Fill each shell with an equal amount of the tofu mixture, reserving any remaining filling. Spray a 13 x 9 x 2 inch baking dish with non-stick cooking spray; arrange stuffed shells crosswise in dish. Combine sauce with any remaining tofu mixture and pour over Manicotti. Bake about 35 minutes. Serves 4.
