TOFU CHEESECAKE 
1 lb. tofu
8 oz. cream cheese
2 eggs
2/3 c. honey
2 tbsp. vegetable oil
1 tbsp. vanilla
1 tbsp. lemon juice
Graham cracker crust
Fresh fruit

Blend all ingredients until smooth. Pour into crust. Bake at 350 degrees for 35 minutes. Top with fruit if desired.
