TOFU CHEESE CAKE 
1 1/2 c. ground granola
1/2 t. coriander
1/4 tsp. anise (opt.)
2 tbsp. honey
1 tbsp. oil
Mix together and press into bottom of baking dish.

CHEESE FILLING:

2 c. tofu
1 tbsp. vanilla
1 pinch salt
4 tbsp. honey
2 tbsp. oil
1 tsp. lemon juice

Whiz all ingredients in a blender until smooth. Pour over granola crust in baking dish. Bake at 350 degrees for 20 minutes until lightly browned on top.

FRUIT TOPPING:

Simply take berries or other fruit and cook with a little water and corn starch to thicken, stirring constantly. You may want to add some honey or brown sugar to sweeten a bit. Cool and spread on top of tofu cheese cake.
