POTATOES SUMP PUMP | |
3 very lg. baking potatoes 1 c. shredded cheddar cheese, divided in half 1 c. sour cream, divided in half 1 tsp. salt, divided in half 1 tsp. black pepper, divided in half 1/4 c. diced yellow or white onions 1/4 c. chopped green onions (about 2 lg.) 1/4 c. crumbled crisply fried bacon (about 5 slices) 1. Bake potatoes by method of choice, let cool. Peel potatoes. Cut into 1/2" cubes, about 5 cups. 2. Arrange 1/2 the cubes on bottom of greased 2 quart baking dish. Spread half the sour cream on potatoes. Sprinkle half the cheese on the sour cream. Season with half the salt and half the pepper. Top with diced onions. 3. Repeat layers using remaining potatoes, sour cream, cheese, salt and pepper. Top with green onions and bacon. 4. Bake in preheated 350 degree oven for 20 to 25 minutes or until cheese melts but top does not brown. Yield: 8 to 10 servings. |
