TURKEY PORCUPINE MEATBALLS 
3/4 lb. ground turkey
1/4 c. uncooked long grain rice
1/4 c. finely chopped onion
1/4 c. chopped fresh parsley
1 sm. clove garlic, minced
1/4 tsp. salt, to taste
2 c. plain tomato sauce
Grated Parmesan cheese

Combine all ingredients in bowl, except tomato sauce and cheese. Roll into nine 2 inch meatballs. Pour tomato sauce into heavy skillet. Add meatballs, turning each to coat with sauce. Place meatballs side by side (DO NOT STACK). Bring ingredients to boil. Cover and reduce to simmer. Cook 30-35 minutes, stirring once or twice. Check is done. Lift meatballs onto platter. If sauce is too thin, boil vigorously until desired thickness. Pour over meatballs and top with grated cheese. Serves 6.
